Frittata/quiche/omelette

crustless quiche? frittata? big baked omelette?

This egg dish is one of my favorite dinners.  I tried a recipe for crustless quiche about a year ago and I really liked it.  But it involved heavy cream and a lot of cheese and breadcrumbs and other things I don’t tend to keep around.  So the recipe has evolved over time to accommodate my desire for lower calorie, higher protein choices and incorporate foods I often just happen to have on hand.

Broccoli Cheddar Tomato Frittataquicheomelette

Ingredients:

  1. Butter a 9″ glass pie dish
  2. Add raw vegetables (I’ve tried all kinds of pre-cooking for the veggies, and they really taste best from raw)
  3. Cover with shredded cheese
  4. In a large bowl mix eggs, kefir (like sour cream) and milk until smooth
  5. Bake at 375 for 30-45 min or until golden brown on top and cooked through (you can tell it’s done when the golden color starts to be visible through the sides of the dish.)
